Time on lees has helped create a soft and creamy texture to the wine with an essence of baked custard tart. The framework is very airy with present but integrated tannins and sherbet like tartness. I call this wine a Lune Croissant because of its endless layers and flavour but its ability to be a light as a feather on the palate all
